GRASS FED BEEF
Our beef is set apart from the commercial beef found in
supermarkets and other big box stores for several important reasons:
We are certified organic through MOFGA.
Our cattle live stress free lives, grazing in pastures and never confined in feed lots. Beef cattle are ruminants which by the most basic definition means that they are designed to digest large quantities of grass and not large quantities of grain as a primary feed source.
Large commercial cattle businesses often confine beef cattle in compact and sometimes dirty feed lots where the cattle consume large amounts of grain in order to increase their weight in a short amount of time, thus increasing their businesses profit margin. Unfortunately, large amounts of grain can cause an acidic buildup in the beef cattle’s stomachs which can cultivate harmful bacteria.
Our calves will begin on it's mother's milk for approximately 4-6 months and will be gently weaned onto grass and hay. Once they reach the proper age/weight, they will be slaughtered at a local slaughterhouse. The beef will be vacuum sealed, frozen and sold directly to customers at wholesale prices.
At Potters Brook Cattle Company we do not use antibiotics or artificial/synthetic growth hormones on any of our cattle.
If a beef animal becomes sick, we will remove it from the herd and treat, firstly with holistic medicine and with antibiotics if it becomes necessary. If a beef animal is treated with antibiotics or any other non-natural medicines then it will remain outside of the organic herd and will not be sold under the organic label.
Our fields and pastures are fertilized with only natural fertilizers.
How It Works
We operate as a wholesale beef producer which has several different components, some of which might be beneficial and some that might not work for the customer.
· The beef will be vacuum sealed and frozen while at the slaughterhouse.
· The customer will need freezer space available for the large quantity of beef as we, nor the slaughterhouse, have storage available.
· An 8 cubic foot chest freezer should be big enough to hold a side of beef.
· The slaughterhouse's cost is included in the amount paid to the Potters Brook Cattle Company.

INFORMATION
An average grass fed steer weighs approximately 800 to 1000 pounds. This can also be referred to as live weight.
Hanging weight is a term used to describe the weight of the carcass (meat, fat and bones) after the head, hide, hooves and internal organs have been removed. Hanging weight represents approximately 63% of the live weight. All of the costs will be based on the hanging weight as that is how the slaughterhouses calculate their costs.
A customer can purchase a whole animal and receive all of the beef cuts OR a side of beef and receive half of the cuts OR a split side of beef and receive one quarter of the cuts.
Specific cutting instructions can also have an effect on the beef product and the ending yield results. (Boneless v. bone-in, 90% v. 80% lean ground beef, roasts v. ground beef, flank steaks and brisket v. ground beef)
EXAMPLE
COST: $5/lb per hanging weight (slaughtering/processing fees included)
LIVE WEIGHT: 800 pound steer
HANGING WEIGHT: 800 x 63% = 504 pounds
WHOLE ANIMAL $5 x 504lbs = $2,520 (approx. 330 pounds of processed meat)
SIDE OF BEEF (half) $5 x 252lbs = $1,260 (approx. 165 pounds of processed meat)
SPLIT SIDE (quarter) $5 x 126lbs = $630 (approx. 82 pounds of processed meat)
